Here is his homemade cranberry sauce that’s an absolute doddle to make and can be made three days in advance, making timings on the day easier.
Marco Pierre White's homemade cranberry sauce
This tangy cranberry sauce gets a kick from fresh orange juice and the richness of port.
- 500 grams cranberries (fresh or frozen)
- 250 grams caster sugar
- 100 ml port
- 100 ml fresh orange juice

Fresh cranberries – Place all the ingredients in a pan and cook until a jam-like consistency is obtained
Frozen cranberries – Cook the sugar and cranberries together. The water from the frozen fruit will be sufficient at this stage. When the fruit has softened, stir in the orange juice and port.

In both of the above, leave to cool and then keep in the fridge in an airtight container.
