Baking Round-up: January 2017 Veganuary bakes

We are now coming to the end of the month and the end of Veganuary 2017. Whether you follow Veganuary or not you cannot deny the impact it has on the food community. We are all more aware of vegan recipes and I thought that I would follow that through with this months baking round-up.

I will admit that my blog, Hijacked By Twins, does not cover many vegan bakes. There are a few vegan recipes, including my delicious vegan raw cacao pancakes, but vegan bakes are still something that I need to add to my repertoire! After looking at these delicious recipes that I am sharing with you today I am left me with even more desire to give it a go.

Here are my top eight vegan bakes from some of the UK’s best food bloggers.

The first recipe that I simply could not resist is from Only Crumbs Remain. These Vegan Chocolate and Cherry Cupcakes show you that you can have your cake and eat it when you are a vegan! I am sure that you will agree with me that these deliciously tempting cupcakes look simply irresistible!

One of my favourite bakes has to be the classic scone. Charlotte’s Lively Kitchen shows us that even scones can be made the vegan way with her Coconut Scones. The traditional butter ingredient has been substituted with coconut oil which is a fantastic ingredient which add a new depth of flavour to the classic bake.

Need a vegan showstopper of a cake? Well look no further! The Free From Farmhouse’s Vegan Victoria Sponge with Coconut Cream will certainly leave your guests wanting more, vegan or not, you will be left wanting a lovely big slice of this decadent celebration cake!

Nothing beats a lovely fresh loaf of bread. The aroma of baking bread throughout the house has to be one of my favourite kitchen smells. Mummy Bakes Dairy Free shows us how to bake a Vegan Twisty Pizza Bread. This loaf is perfect for a pasta lunch, the swirls of tomato, oregano and basil make this the perfect bread to have on the side.

Carrying on with the theme of fresh bread is a recipe that would definitely satisfy my love of cheese. The Free From Fairy uses nutritional yeast to recreate the cheese flavours in her Vegan and Gluten Free ‘Cheese’ Bread. In the past my gluten-free bread has not been very successful but I need to try again using some Free From Fairy flour!

Next up is a recipe that is perfect for afternoon tea. Tin and Thyme has created Vanilla Almond Cookies with a divine blend of coconut oil, sugar, almonds and rice milk to name but a few, these lovely little cookies will be the ideal addition to your afternoon tea. These are most definitely on my to bake list!

The following recipe is one that I saw and bookmarked over the Christmas period but a bake that is great all year round. The Peachicks Bakery served up some amazing Vegan Christmas Cake Biscotti that, if truth be known, I could quite happily eat all the year through!

The final recipe for this months baking round-up is from Quite Frankly She Said. Whilst we were all celebrating Her Majesties 90th birthday last year these beautifully patriotic Vegan Spiced Cupcakes were created, full of delicious spices and raisins, these cupcakes make a mouth-watering delight, whether you are celebrating a 90th birthday or just want to enjoy some cake!

Next month there are a few foodie occasions to celebrate. We have got Yorkshire Pudding Day, Bramley Apple Week, Valentines Day and Fair Trade Fortnight so expect lots of delicious recipes in the next food and baking round-ups!
