
Kate demonstrates cupcake icing techniques
At a recent Google+ hangout BritMums — along with some of our favourite baking bloggers — asked that eternal question: how do you perfectly ice a cupcake?
We were joined by Kate Moore, the baking expert for Whitworths Sugar, who was full of advice and tips. We all shared our baking blunders with Kate, discovered some great advice on how to correct them and learned her icing tips.
At the last minute, Kate’s computer died on her so you can see Kate talking into her mobile phone and being heard through Jen’s computer! Technology, eh? What followed was an entertaining and interesting hangout with Kate holding her mobile phone between her ear and shoulder, piping the perfect brandy butter cream swirl onto a Boozy Sultana Cupcake and running us through her top tips at the same time. Now that is what we call multi-tasking.

- How to correct my cracked chocolate log
- Why are my Victoria sponges sinking and not light and fluffy?
And we got great tips such as:
- Use a disposable icing bag – it’s easy to use and easier to clean up afterwards
- Make cupcakes ahead of time and freeze, then ice before you need them
- Icing should be smooth enough to flow easily from the bag
