Foodie Round-up: Healthy options

foodie round-upWell, hopefully anyone who made healthy eating resolutions is still feeling inspired as we enter the second month of the year. For this month’s round-up, we are focussing on healthy alternatives. I try not to use the word ‘Diet’ as it can be so off putting – let’s talk about lifestyle choices instead!

It’s commonly known that breakfast is considered to be the most important meal of the day and Foodie Quine starts us off on fine form with her Mango, Pineapple & Coconut Smoothie – Using just 4 ingredients, this instant breakfast can be prepared in seconds.

I joined the craze for overnight oats this month with my Crunchy Pomegranate Bircher Muesli which was a huge success in our house.

Honest Mum shared a delicious looking recipe for Seafood Spaghetti with Cherry Tomatoes – She cleverly uses frozen seafood which keeps the cost down.

Mum in the Mad House came up with a clever and healthier alternative to calling for a takeaway with her Fakeaway Slow Cooker Donner Kebab – I am so tempted to try this!

Tinned Tomatoes catered for quick lunches when speed is of the essence. Her Quick Vegan Lunchtime Green Soup for One makes a refreshing change from stodgy sandwiches.

Not to forget the side dishes though, Hijacked by Twins gave good old baked beans a face lift with her Full of Goodness Baked Beans.

We go through tons of sweet potatoes in our house – such a great alternative to starchy potatoes and so much quicker to cook – My Food & Happiness has made them into a meal with Sweet Jacket Potatoes with Tomato & Herb Beans

There’s no need to completely go without treats when we are watching what we eat, Jane from Easy Peasy Lemon Squeezy’s Banana, Date & Walnut Loaf is perfect when only a slice of cake with a cuppa will do!

Finally with Valentine’s Day on the horizon, JuggleMum has supplied some Valentine’s food inspo if you need a few ideas!
