Cauliflower Bites – finger food for toddlers

It can be difficult to consistently get vegetables into children.  All kids at some point decide to exert a bit of control over Mummy and Daddy and decide to point blank refuse.  So at some point on our weaning journey I started to include an insurance policy of hidden vegetables.  I always advocate continuing to offer vegetables in their natural form but it can be a great way to broaden your child’s diet (without them noticing!)  In my time I’ve included vegetables in meatloaf, scones, muffins, quiches and even made parsnip cake.

This would be a great recipe for those of you following Baby Led Weaning techniques but even if you’re not it’s a good idea to introduce finger foods alongside mashed and pureed foods to help speech development.

Cauliflower Bites – makes 6

Ingredients

2 eggs
45g, 1.5oz Cauliflower
30g, 1oz Good quality aged Red Leicester or other hard cheese
Oil for greasing

Method

Preheat the oven to 200oC / 400F / Gas mark 6.

Cook the cauliflower in boiling water for 4 minutes (or use leftover cauliflower).  Grate the cheese into a bowl and crack in the eggs.  Grease a mini muffin tin.

Once the cauliflower is cooked, drain and cool with cold water.  Cut the cauliflower up into small pieces and mix into the egg and cheese.  Put into the wells of the mini muffin tin and bake for 15 minutes or until puffed up, golden and cooked through.

Serve with vegetables.

It's funny the reason why I'm probably so adept at hiding the vegetables is I've been doing it for years with my husband. Also presenting vegetables in different ways or get slightly different varieties so he'll try them. I remember his Mum being astounded that he eats kale (but has always said he hates cabbage).
