Easter has been and gone and Spring must surely now be in the air? I do hope the Easter Bunny was good to you and you didn’t fall for too many April fools. I do always enjoy seeing the foodie ones and there were some crackers this year. (Loved Jamie’s One Ingredient Cookbook!) I’m keeping things green and healthy this month following on from any Easter overindulgence.
The theme of my April roundup is ‘Spring Greens’ but I’ve extended that to include pretty much any green leefy veg so expect kale, broccoli, asparagus, leeks and spinach in addition to actual Spring Greens.
Pasta and risotto with spring greens
Let’s kick things off with the real deal. Danni at Hungry Healthy Happy incorporates them into her Spring Green Vegetable Gnocchi. It’s light and fresh and a quick and easy weeknight meal that will boost your vegetable intake. Helen at Fuss Free Flavours suggests that we vary our grains in her easy to make buckwheat and rice risotto, packed with spring greens and leek. It’s both naturally gluten free and vegan. You’ll often find bags of chopped spring greens and other prepared vegetables going for a song at the end of the day so Camilla put them to good use in her Green Soup with Sea Spaghetti for a nutritious and budget busting meal!
Recipes for asparagus season
It’s probably still a touch too early for the British Asparagus season but keep these recipes up your sleeve for when it does start to appear in the shops. Beach Hut Cook brings us Thyme Roasted Chicken with Potatoes and Asparagus – an easy roast dinner without all the carving. Full of goodness and Spring flavours Jo’s Spring Lemon and Dill Salmon Pasta with Asparagus and Peas is the perfect start to get you back on track after any chocolate indulgence. Choclette incorporates a bit of foraging into her dish of delicately flavoured fresh Spring risotto with Cornish asparagus, peas and wild garlic pesto.
Spinach recipes for spring
Spinach is possibly my favourite green so I’ll kick off with one of my own recipes for a Cheesy Spinach, Mushroom and Potato Crust Pie. It’s a Meat Free Monday family favourite in the Foodie Quine household. Ready in under 20 minutes Penne with Peas and Spinach is a quick and easy midweek meal from Jacqui at Recipes Made Easy.
Tenderstem broccoli recipe ideas
Tenderstem broccoli makes its way into a quirky Cornish Pasty thanks to Jane at The Hedgecombers. Perfect hot or cold her Tenderstem and Cornish Blue Cheese Pasty marks the start of the British Tenderstem season, which kicks off in May. Bintu shares her Spring Vegetable Platter alongside a Green Goddess Avocado Dip. Perfect for any seasonal get together and you can ring the changes with different veggies.
Don’t forget the kale!
Bringing up the rear we have the ultimate trendy green – Kale. Kate at Veggie Desserts has created a bright green kale soup which is not only quick and easy, but full of nourishing ingredients and tastes delicious. I’ve got an Asian twist on kale soup which would be perfect for the upcoming Thai New Year. My Kale, Noodle and Coconut Broth has a real freshness in its flavours and is the perfect meal in a bowl – spiced up with red chili and ground coriander and then cooled down with coconut milk and seasoned with soy sauce.
