Baking Round-up: Fruity bakes

Hello there and welcome to the Baking Round-up. Summer feels like it has finally arrived, and I can’t tell you how happy that makes me. The summer heat hasn’t stopped our bakers from getting busy in the kitchen. With such an abundance of soft summer fruits to choose from, it seems to have inspired a wonderful selection of sweet bakes. Here’s a selection of just some of fruity bakes I’ve seen this month.

One of the star fruits of the summer has to be strawberries. Wimbledon wouldn’t be the same with this sweet fruit, ideally served with lashings of cream. There’s only way of improving that famous combination of strawberries and cream, that’s by adding meringue. Oh yes, I’m talking Nigella’s favourite, the pavlova. Cooking with my kids, got the children involved in making this delicious Summer Berry Pavlova. Whilst Recipes Made Easy has created this equally yummy version of a Summer Berry Pavlova too.

Still on the theme of strawberries, I know my children would got bananas for these yummy Strawberry Chocolate Banana Muffins by Searching for Spice. A recipe with easy in the title has me hooked straight away, Jo’s Kitchen Larder has baked an Easy Strawberry Yogurt Cake, that would be simply perfect for sharing with friends. As you know, I’m a big Mary Berry fan and I think Mary would be impressed with this epic Strawberries and Cream Cake by The Baking Explorer.

Forget unicorn cakes, A Strong Coffee is leading the way with a new baking trend, flamingos. Her Cherry & Almond Flamingo Cupcakes are just adorable.   These Beetroot Chocolate Cupcakes from Only Crumbs Remain also have the pink wow factor too.

I must confess I have a slight obsession with loaf cakes, I think it comes down to the fact that they’re just so easy. Just pop in a cake tin liner and off you bake. So on a whim I baked a rustic Apple & Cinnamon Loaf Cake, which then sparked a debate at home on whether cakes should be iced or not. All I’m going to say, is that icing can be controversial. Anyway moving on, this scrumptious Raspberry Lemon Yogurt Loaf Cake by Jibber Jabber, certainly ticks all the flavour boxes for me and looks a real tea time treat.

Being gluten intolerant or having a gluten allergy needn’t mean missing out on cake. Glutarama, has come up with a delectable Rhubarb & Ginger Crumble Cake, just the sort of cake to have with a coffee. Whilst the Gluten Free Alchemist’s Pear and Chocolate Cake should keep chocolate lovers happy.
