Baking Round-up: Summer inspired bakes

Hello and welcome to the BritMums Baking Round-up. This month bloggers have been incredibly busy creating tantalising summer inspired bakes. I absolutely adore the warm summer months, the lighter mornings and balmy evenings just make me feel so much happier. The summer is the perfect time of year to get out doors and spend quality time with family and friends. Whether you’re having a barbecue or picnic, it doesn’t matter as long at there’s plenty of good food to share, including some tasty bakes.

Packing for a summer picnic doesn’t mean just making boring sandwiches, absolutely not. Savoury scones, tarts and bakes are far more interesting. These Vegan Red Onion and Chilli Cheese Scones from The Peachicks Bakery sound heavenly and yes they really are vegan too. Fab Food 4 All has created these delicious looking Sunny Picnic Quiches, whilst Tin and Thyme has baked some delicate Asparagus Tarts. Glutarama has created an ingenious recipe for Egg Free Gluten Free Scotch Eggs, don’t they look good and you would never guess they were egg free.

There’s nothing like a slice of cake to finish of a picnic in style. Packing a loaf cake is good choice as they are so easy to slice. Hijacked from Twins has baked a very summery Honey & Lavender Cake, which I’m sure would be utterly divine with a flask of strong tea. Or maybe try a slice of my Blueberry Lemon Coconut Loaf Cake. Since seeing Baking Queen 74‘s Blackberry Mini Bundt cakes I’ve decided that I must have a mini bundt tin in my life. These little bundt cakes are so perfectly proportioned, although I think it would be difficult to stop at just one! Foodie Quine has baked some scrumptious summer Strawberry, Almond and Chocolate Chip Muffins, my children would love them. There’s nothing more summery than strawberries and cream, and these Strawberry Shortcakes from Baking with Granny certainly are. Only Crumbs Remain has baked a really impressive Strawberry and Basil Upside Down Cake, using seasonal strawberries.
