Blooming Delicious launches on 7th April and contains lots of ideas. Divided into trimesters, pre- and post- pregnancy, the recipes include: Miso Salmon with Edamame, Super Seedy Soda Bread, Chicken Burgers with Avocado, Banana, Date and Coconut Energy Truffles, and more!

Banana, Date and Coconut Energy truffles

Banana Date and Coconut Energy Truffles

These little energy bites are popping up in all the health-food shops at the moment. They are so easy to make at home, where you can add whatever flavours and ingredients you like, making them bespoke to you and your tastes throughout your pregnancy.

I made these while in my first trimester as I was totally exhausted and needed the occasional energy boost but didn’t want to rely on sugary biscuits and chocolate bars to fix my cravings. They offer a great injection of energy when it comes to elevenses, especially when paired with a crunchy apple or a handful of nuts to boost your intake of protein, fibre and much-needed minerals for you and your growing baby.

Prep time: 15 minutes
Makes 30
 

  • 250g whole almonds
  • 100g pecan nuts
  • 200g pitted dates
  • 2 over-ripe bananas
  • 2 tsp chia seeds
  • 2 tsp flaxseeds
  • 2 tsp cocoa powder
  • 1 tsp ground cinnamon

 

For the coating:

  • 100g desiccated coconut

 

Method:

  • 1 Put the almonds and pecans into a food processor and blend
    for 3–4 minutes until they turn to powder. Add the remaining
    ingredients and blend again to form a paste.
  • 2 mould the paste into 30 small balls. i find this easier if i wet
    my hands first, to stop the mixture sticking too much. roll each
    ball in the desiccated coconut. Place the balls on a tray, cover
    well with cling film and place in the freezer. once the balls
    are hard, you can transfer them from the tray into freezer bags.
    Label the bags with the contents and the date made. They will
    keep in the freezer for up to 1 month.
  • 3 They are delicious served at room temperature or when just
    starting to defrost.
